Buckwheat is a unique grain crop due to its unusual shape and fragile kernel, which makes its processing particularly delicate. In traditional processing technology, the grains are steamed to strengthen the kernel and give the groats their characteristic brown color and pleasant aroma. The processing stages include cleaning, hydrothermal treatment, fractionation, dehulling, and impurity removal. Since steaming and drying require significant amounts of energy, part of the heat is generated by burning buckwheat husks. Green buckwheat groats can be produced without hydrothermal treatment.
